(From The Raw Truth)
1 cup coconut
½ cup raisins or dates, chopped
Handful cilantro
1 tbsp whole cumin (sauté in dry pan, then grind in clean coffee mill)
Mix all ingredients. Add squeeze of lime juice to taste. Delicious alone or with rice or on sandwich.
Ripe bananas
Almonds, soaked overnight and drained
Dates, soaked overnight
This recipe can be made in any size batch because it is dehydrated and can keep in airtight containers for some time. Refrigerate to keep even longer.
Experiment with amounts to determine your preference for taste. Try 5 bananas, 3 cups almonds, 2 cups dates to start, adding date water. Blend all ingredients in food processor (make just wet enough to blend well). Spread mixture on dehydrator trays and dry for 24 hours, then longer if needed. It turns out like a thick fruit leather, sweet and delicious. If you don't have a dehydrator, spread in oiled baking pan and bake overnight in lowest setting on your oven.
